These fresh, tasty mushroom parcels are perfect for a quick and easy weekend lunch.
In a small saucepan, fry onion in oil,don't brown,add tomato, let it cook for 3 min, now add in the mushrooms, stir well, cover for further 3 mins,your mushrooms is ready, serve with ugali.
Preheat the oven to 200 degrees. Wash the potatoes well and cut them into equal pieces of approx. 3 cm. Chop the rosemary and pick the thyme from the sprigs. Add both to a bowl and pour in the oil. Season with pepper and sea salt.
Simply toss in butter, oil, garlic, salt and pepper. Spread on baking tray and bake for 25 minutes at 220°C/450°F (hot oven = better colour!). No turning or tossing
